Stuffed cookies. The possibilities are endless and delicious! You can stuff cookies with Nutella, Peanut butter, biscuit spread and pretty much anything your sweet heart desires! I adore stuffed cookies (my favourite being Nutella stuffed of course) and so I have put together a list of the absolute best stuffed cookie recipes there are. (Warning: This post includes mouth watering recipes!)
1. Nutella Stuffed Chocolate Chip Cookie Pies
Yes, you read that correctly. Not only are these cookies stuffed with Nutella, they are also PIES! This recipe from Marsha’s Baking Addiction has a pastry tart base, with a Nutella centre, topped off with a chocolate chip cookie, making them perfect for any party! (Or just a night in with Netflix 😉 ) These would undoubtably be best eaten warm straight out of the oven when the Nutella is still gooey ❤
2. Nutella Stuffed Therapy Cookies
This recipe has always been-and always will be-my ultimate go to recipe for cookies. My entire family has fallen head over heels in love with them and the photo shows why *drools*. The cookie itself is flavoured with cocoa powder to give it a decadent chocolatey flavour and chocolate chips are stirred through-just in case the chocolate centre wasn’t enough 😉 . The recipe comes from Cleobuttera and there’s also another cookie recipe on this list from this baking blog, so definitely go and check it out for some amazing recipes! For this cookie, the Nutella is spooned into balls on a baking tray, then frozen until they’re solid. When the cookie dough is put on the tray, you stuff the dough with one frozen Nutella ball which then melts and goes deliciously gooey in the oven! This basically creates the best.ever.cookie. EVER.
3. S’mores Stuffed Cookies
I have only recently discovered my love of S’mores. Marshmallow+Chocolate+Biscuits=pure perfection. So these cookies were no exception.They are from a lovely blog called Cookienameddesire and well, just look at them! ❤ The cookie dough is not your average dough. It has chocolate chips and crushed graham crackers mixed through it and the dough is stuffed with mini marshmallows before it’s cooked making it ooey, gooey and fabulously delicious. Another bonus of these, is that you deliberately undercook them which means, they are soft in the middle and chewy on the outside. If you love S’mores, then these are the perfect dessert/snack/breakfast/lunch/dinner (ok, maybe I’m obsessed).
4. Biscoff Explosion Cookies
Biscoff is the only thing I truly need in my life. If you don’t know what it is, you’re living your life under a rock! I’m kidding-but I’m not kidding about how amazing this spread is! The spread is made from crushed biscotti lotus biscuits-you will have no doubt eaten at least one of these when you were younger-and you can get either smooth or crunchy spread (smooth is my personal preference!). This is the 2nd recipe from Cleobuttera and is basically the same as her Nutella stuffed cookies, but with the adaptation of Biscoff spread ❤ There is literally Biscoff in every corner of this cookie. The dough has Biscoff spread and crushed lotus biscuits in it, the centre is-of course-lotus spread stuffed and the top is sprinkled with broken up lotus biscuits too. I absolutely adore these and they are pretty much on par with the Nutella Stuffed Cookies. It’s basically a cookie stuffed with cookies. Yarssssss please!
5. Oreo Stuffed Cookies
This next recipe is one which incorporates everyone’s favourite treat-OREOS! It comes from this website and they look so good and perfect for dunking into a big glass of cold milk ❤ Because of the Oreo in the centre, these cookies have more of a pie shape with a deep centre. The dough has chocolate chips in to double up on the chocolate flavour. These are also apparently very big when they’re baked, making them the best size in my opinion! 😉 Oreo stuffed cookies, you definitely have to try them! 6. Caramel Stuffed Soft Gingerbread Cookies
The final cookie recipe I adore, are these soft gingerbread ones. One of the reasons I love this recipe, is because gingerbread instantly makes me think of Christmas! And so, seeing as December is quick approaching, these seemed perfect for my list. They aren’t your average cookies. Oh no. These are stuffed with caramel. On top of this, they’re flavoured with cinnamon, nutmeg and-of course-ginger ❤ . The method is super simple, all you have to do, is stuff your unbaked cookie dough ball with a soft caramel. This then melts and turns fabulously gooey in the oven. Therefore, I’d recommend eating these fresh outta the oven for the ultimate taste sensation! The recipe is from the blog Belle Vie and honestly, I don’t think the photos give them any justice. Even if you don’t eat them warm, the chewy caramel centre will be amazing in contrast with the soft, chewy cookie.
